Lemon Vinaigrette

Lemon zest and lemon juice are the ingredients that make this salad dressing absolutely sparkle with flavor. Try it on freshly grilled fish or chicken. Delicious!

Yield About 2/3 cup


  • 1/4  cup olive oil 
  • Zest from 1 lemon  
  • Juice from 2 lemons 
  • 2 t. Dijon mustard 
  • 2 t. honey 
  • 1 shallot, minced

Whisk all ingredients in bowl to blend. Season with salt and pepper to taste.

The dressing can be made a day ahead and refrigerated. Bring to room temperature before using.
