Angel Hair Pasta with Fresh Tomato Sauce

Either as light main dish or a side dish with grilled steak or chicken, the fresh flavors of this pasta are sure to please. Fresh ingredients DO make a difference.

  • 8 oz. angel hair pasta
  • 4 roma tomatoes
  • 3 T. olive oil
  • 2 t. Tre Gatti Red Wine Vinegar
  • 2 T. finely chopped fresh basil
  • 2 T. finely minced red onion
  • 2 T. Parmesan cheese

Bring a large pot of lightly salted water to a boil. Place the angel hair penne pasta in the pot, cook according to package directions, until al dente, and drain.

In a large bowl, toss the cooked pasta with the tomatoes, olive oil, vinegar, basil, red onion, and Parmesan cheese.

Serve immediately.
