Angel Hair Pasta with Fresh Tomato Sauce

  • 8 oz. angel hair pasta
  • 4 roma tomatoes, chopped
  • 3 T. olive oil
  • 2 t. red wine vinegar
  • 2 T. finely chopped fresh basil
  • 2 T. finely minced red onion
  • 2 T. Parmesan cheese

Bring a large pot of salted water to a boil. Place the angel hair pasta in the pot, cook according to package directions, until al dente: drain.

In a large bowl, toss the hot cooked pasta with the tomatoes, olive oil, vinegar, basil and red onion. Sprinkle with Parmesan cheese.

Serve immediately.
